Muscle Scramble | Green Onions, Uncured Bacon and Coconut Oil For Perfect Eggs

Paleo breakfast | muscle scramble
Coconut Oil is a special type of fat that is easily converted into energy!
Eggs can get kinda boring. With eggs being a staple in my diet, I've experimented with a lot of different ways to make em'. I've made all kinds of quiche, frittatas, cooked them in red-palm oil, but my favorite has always been with the big 3; green onions, bacon, and coconut oil. That's it.

An easy way to spice up just about any dish is to add a few green onions, and eggs are a perfect example of that.

Now if you're like me and train regularly, a few eggs and some green onions just isn't going to cut it. I need calories. The downside to a paleo-style diet is that it's naturally low in calories (the calories you do eat are nutrient dense so it's all good). To offset this, I like to add a few slices of bacon to my meals here and there.

Sure, bacon isn't like grass-fed beef providing healthy fats, but it will help me increase my caloric intake. By increasing my caloric intake, I'll be able to train harder, thus building a better, healthier body in the long run!

The last secret to making the perfect eggs is to cook them in unrefined coconut oil. The first time you try cooking your eggs in this oil you'll be amazed, I promise you. The eggs stay moist and fluffy of course but more importantly it tastes amazing.

Due to the coconut oil consisting of mostly medium-chain triglycerides, the healthy fat will be used as energy rather than stored as fat.

Oftentimes of training days I'll include a slice of sprouted-grain bread with grass-fed butter. I'll take the extra energy (for my training) at the expense of a few cheap carbs.

It's all about choosing the right foods people!

If you don't already have some unrefined coconut oil, you need to get some, ASAP. I use it every day, in my protein shakes, when I cook a lot of my meats, even in my coffee sometimes!

This oil to the right is the coconut oil I prefer. It's unrefined and it's in a glass container so you don't have to worry about any plastics.

Enjoy.
