Cooking with Cast Iron | Paleo Chicken Thighs

Dry chicken sucks. This chicken doesn't.

Until recently, I've always been a huge BBQ fan. Growing up, I was never shown how to properly cook with oil and wasn't introduced to a cast iron pan until college.

Cooking with a cast iron pan is amazing because it's like grilling, frying, and baking all mixed into one.

Check out this easy recipe for paleo-style chicken thighs.

Paleo chicken tenders

Homemade Almond-Flour Chicken Tenders

I'm not a big fan of the chicken breast. They're boring and tastes like cardboard.

These chicken tenders don't suck...especially with some Frank's Red Hot.

Check out the recipe.

My Paleo Shopping List
Minus The Dark Chocolate (With Almonds) That Got Eaten In The Car

paleo shopping list
I prefer to get what I can from Trader Joe's and my meat from New Seasons.
I might have a new favorite vegetable; Brussel Sprouts.

I've always hated brussel sprouts until recently, and my new favorite way to cook them comes from one of John Meadows' ideas.

John Meadows is a genius when it comes to diet and nutrition, and suggested squeezing fresh lemon juice on cooked sprouts.

Wow. I like to steam the brussel sprouts before slicing them into halves, followed by salt and pepper. Simple as that, perhaps the best brussel sprouts you've ever had!

Here's what was on the list;

Lose Weight with this Hearty Paleo Lunch

This is my post workout meal. If you are attempting to lose weight, a single burger might be a better idea!

Paleo Burgers - 100% Grass Fed Beef
I eat so much beef it's not even funny. I eat beef (grass fed) like normal people eat chicken. Maybe more. I pretty much eat red meat every day. I also never do ab workouts and constantly maintain a six-pack. I let my food do the work for me.

New Seasons usually carries the 5% or 10% lean pasture beef which simply doesn't cut it for me. If you've been around Paleo Evolved much, you know how I encourage healthy fats - saturated included. Well with only 5% fat content I decided to add a little of my own.

I want to add some muscle this winter so in an effort to increase testosterone, I've increased my saturated fat content. This allowed me to add some fresh guac and uncured bacon to my burgers. I pre-mixed some garlic, salt, pepper, minced garlic and sliced onions in the burgers before throwing them onto the grill.

I've also never really eaten wild rice before. While I usually stick to white rice to avoid plant toxins, I can't accept the idea that brown rice and the added fiber is unhealthy. It's NOT something that I eat daily however. Maybe once a week...maybe.

Grilling Asparagus Secret! Stop killing yourself!!!

Too many people make the huge mistake of cooking with olive oil. Extra Virgin Olive Oil is very sensitive to heat and literally goes rancid at 350*F. This means that the oil oxidizes and creates free radicals which are known to lead to cancer. Save the olive oil for your salad.

A better oil to cook with is Avocado Oil. This healthy oil is stable up to 500*. Cook with this oil instead of Olive Oil PLEASE!

Pasture Raised Lamb with Parsnips and Tators

I eat lamb and salmon at least once each week, and last night was my lamb night. I prefer getting the lamb arm chop cut from New Seasons Market. It usually costs around $6 and I usually cut in in half for two different meals. If I am feeling the need for a re-feed I will eat the entire thing though!

As you can see from the picture above, the bone is full of delicious bone marrow! Growing up I would have avoided this like the plague, but now that I eat Paleo I know better and love "God's Butter".

This is a sample paleo meal that I would use post workout. Plenty of protein and carbs to refuel, plus some veggies for the bonus nutrition.

The recipe is pretty simple, here it is;

Paleo Style Coconut Flour Pizza
The Best Damn Gluten Free Pizza Period

Paleo Pizza - Coconut Flour Pizza Crust
Some days I just need some pizza!

That being said, obviously I am not down with spending $5 for Dominos take-out as my ass would shake for a week, although 5 bucks for multiple meals would be amazing (sometimes I envy my ignorant, out of shape friends).

I've tried cauliflower and almond flour Paleo Pizza Crust Pizzas, however this is my favorite hands down.

I got the crust recipe from Chris Shugart of T-Nation and made this with some leftover grass fed steak I had in the fridge. I like these paleo pizzas because they are high in calories for a refuel, however the calories are still relatively clean; meat and veggies.

Admittedly, there is a decent amount of cheese in this recipe. If dairy is an issue for you, I apologize!

With this site being focused on muscle growth, high caloric meals like this are great for off days! With this pizza you are going to get tons of both veggies and protein!

Here is the recipe!

Build Muscle With Paleo Chili
Grass Fed Beef and A Ton of Veggies!

paleo chili recipe
The best way to go about paleo eating is to be prepared. Preparing meals ahead of time not only saves time but it also ensures we are feeding ourselves the right nutrients at the right time. It ensures we do not cheat!

I've been cooking chili with this recipe since I was in college. This was a great way for me to get a nutrient dense meal without spending too much money. I used to make it with beans but now usually omit them.

I love this chili because it's loaded with healthy protein, fat and tons of veggies. I can't think of a better way to sneak veggies into a diet than chili.

Here's how to make it!

Paleo Fries - Crispy Sweet Potato Fries

            Paleo Sweet Potato Fries Recipe

sweet potato fries
In an effort to get excess calories, sweet potatoes are a major staple for my diet. I like them mashed with coconut oil but when not at home, sweet potato fries are the way to go!

Sweet potatoes are a great source of both antioxidants beta carotene and vitamin c. Beta carotene is what gives the potato it's orange color but both of these antioxidants will help fight against diseases like cancer. Sweet potatoes are also great because unlike most plants, sweet potatoes have little anti nutrients to worry about. The last thing I want after a workout is poor absorption...

Speaking of post workout, the starch found in sweet potatoes is great for post-workout nutrition. The carbs will be a great source of calories to replenish the energy lost during the workout and also fuel new muscle growth! A chicken breast with a sweet potato is a perfect post workout meal.
