Meat Color | Why Did My Ground Beef Turn Brown?

Brown Slime
Why Red Meat Turns Brown

meat color change - why meat color turns brown
Why Meat Turns from Red to Brown
Just kidding about the brown slime. But I've found my ground beef does turn brown every time I yank it out of the fridge.
"Color is the single most important factor of meat products that influences consumer buying decision and affects their perception of the freshness of the product. Everyone dealing with meat products should have a working knowledge of the color".
-Boles, Pegg.
I got home from New Seasons Market yesterday and it happened again. Curious, I decided to look into the cause.

Saaaaay What??? Raw Milk Versus Soda

Looove Me Some Raw Milk!

Paleo Diet
I stole this from somebody. I can't remember where though (just found it on my desktop). Sorry whoever made it

Paleo Thoughts

I love this image... actually I hate it because it's so true.

It's so STUPID that people will HONESTLY consider raw milk dangerous and then allow their children to consume gallons of soda.

I get it -- kind of. I get that people are scared of getting sick from raw milk. The truth is that it's very rare to get sick from raw milk sources and you're actually more likely to get the same sickness from veggies like sprouts.

Think about it, Farmers are going to great lengths to ensure the safety of their milk to ensure their business is sustained. Large cow farms that only care about distribution are the farms that are dirty. They don't care about their consumers.

The same is true for soda. Pepsi Co. doesn't give a shit about you. They don't care that all that fructose you are ingesting can lead to cancer. They don't warn you to limit your intake.

All I can say is that I will never conform or simply go with the crowd because it's what "other people" are doing. I go with what I know and what makes sense to me.

Raw, natural, unaltered milk seems a lot safer than soda if you ask me. How could anybody argue that? I would much rather get sick for a few days than develop cancer for the rest of my life.

Rather Than Focus On The Symptom, Why Not Treat The Cause Of Heart Disease? What Your Fat Doctor Doesn't Tell You

why i love cholesterol

Fat Doctors

I’m that guy. I walk around work all day eating hard-boiled eggs. Although this seems perfectly normal to me, I’m sure most of my co-workers think I’m weird.

Naturally people ask questions, usually asking why I don’t add salt and pepper and the inevitable;
“aren't you worried about all that cholesterol?”

I tell them I love cholesterol. People often hear cholesterol and think it’s this bad thing. The truth is that cholesterol is awesome. It’s recently being argued as an anti-oxidant due to its protective properties. As we should all know by now, it’s inflammation that causes cholesterol to be the bad guy.

The way I look at it, cholesterol is like a police officer, it can be good or bad, depending on YOU.

Here's what I mean;

But Sour Cream Isn't Paleo!!!

paleo dinner - lamb shoulder blade
This is pretty much my perfect meal. If you check out Paleo Evolved regularly, you know how much I enjoy fresh lamb and salmon.

It has plenty of healthy fat and protein, my favorite veggie for vitamins and minerals, papaya for digestion and the potatoes will add extra carbs to fuel my needs.

Why I (and you Should) Eat Sour Cream

Chuck Roast On The BBQ - My Paleo Dinner From Monday Night

Grass Fed Beef on the Barby
My Experiment With BBQ'in A Chuck Roast

Grass Fed Chuck Roast
Most chuck roast recipes call for a crock pot/slow cooker. Well I'm a guy and I like to BBQ.

I had the day off and wanted to bust out the Traeger BBQ. If you don't know what that is, it's a pellet grill that allows for indirect heat at various temperatures, including smoke. It makes the best chicken in the world, hands down.

Anyway, I marinated the roast for 24 hours to try to get as much flavor as possible. Here is what I used for the marinade and how it turned out;

Bacon And The Paleo Diet

Is Bacon Paleo?
Of Course It IS!

is bacon paleo
Just don't make bacon your main entree!
I wouldn't say I eat bacon every week, buuut ya I pretty much eat bacon every week.

Just be careful and if fat loss is your #1 goal restrict this food of the gods and use it for re-feeds to give yourself some positive motivation as well as extra cals.

Bacon does have a ridiculous amount of saturated fat, sometimes I cut away the pure fat sections. (I'm not sure it's necessary though).

Just make sure you get the uncured, nitrate free kind, yo!

Don't listen to vegetarians, their veggies won't save them!!

My Paleo Shopping List
Minus The Dark Chocolate (With Almonds) That Got Eaten In The Car

I prefer to get what I can from Trader Joe's and my meat from New Seasons.
I might have a new favorite vegetable; Brussel Sprouts.

I've always hated brussel sprouts until recently, and my new favorite way to cook them comes from one of John Meadows' ideas.

John Meadows is a genius when it comes to diet and nutrition, and suggested squeezing fresh lemon juice on cooked sprouts.

Wow. I like to steam the brussel sprouts before slicing them into halves, followed by salt and pepper. Simple as that, perhaps the best brussel sprouts you've ever had!

Here's what was on the list;

Paleo Weight Loss - How The Paleo Diet Will Satisfy All 5 Tastes And Stop You From Overeating!

Stop Reaching For the Sweets!
Rather Than Attempting To Satisfy Your Appetite Try Satisfying Your 5 Taste Preferences and Lose Weight Fast!

Lose Weight By Satisfying All Your Taste Preferences!
Just like humans have adapted consciousness and instincts to help make survival decisions, we've also developed a taste sensory system to help us choose foods that are healthy versus foods that are toxic and detrimental to our health.

Satisfying the different tastes goes beyond simply satisfying an appetite, satisfying all tastes helps avoid binge eating and ensures we don’t develop any nutrient deficiencies.

The 5 Major Tastes recognized by humans are; Sweet, Sour, Salty, Bitter, and umami tastes.

If you are attempting to lose weight it’s you must understand how you can activate all 5 taste sensors to avoid reaching for the sweets after dinner.

This concept will argue that our cravings for sweets is  a symptom of deficiency, and that a steak will help relieve that craving much more than any candy bar could ever do!

Portland is great, but you can't beat the outdoors.

This year my buddy Dan talked me into going snowshoeing. Dan's into hiking and is always dragging me all over the place, not to mention getting me to spend hundreds of dollars on overnight hiking supplies.

Anyway after the first time snowshoeing to Twin Lakes (near Frog Lake on Mt. Hood) I was hooked.

It's crazy to be able to walk on the snow without slipping around or falling deep into the snow. That feeling and the scenery around makes for a great time.

I have a few cool videos from the last two trips. Check em out.

Seafood Fraud - is that salmon really wild caught?
is that tuna even tuna?

seafood fraud - paleo diet
18% of Supermarket Seafood was found mislabeled!
It took Oceana two years to conduct its second seafood investigation here in the United States.

With the United States being the 2nd largest consumer of seafood, it’s not good that 33% of the 1,200 samples were found to be mislabeled.

Somewhere in the supply chain your fish is being fraudulently mislabeled and the problem is nobody can tell where it's happening.
